Simple nutritious low carb snack or side. Great way to get in some extra greens. Quick, easy and of course tasty too!

- 2 zucchinis, grated, squeeze out excess moisture
- 1 handful kale, chopped
- 3 eggs
- 1/3 cup coconut flour
- Your choice of herbs/spices
- Salt & pepper
- Coconut oil for cooking
Combine with kale and eggs in a bowl and stir to combine. Gradually add flour and seasonings. Stir well until mixture holds together.
Heat coconut oil in a pan over medium heat. Take heaped tablespoons of mixture, form into a ball and place in pan. After about 30 seconds flatten them out by pressing down gently with a spatula. Pan fry for about 3 minutes each side or until golden brown.
Remove to fritters to a plate lined with paper towel to absorb any excess oil.
*Can be served warm or cold
