Hulk Bread (Gluten & Grain Free Green Bread)

 

A great way to get some extra greens into your day! This bread is not only easy to make and low in carbohydrates but is super yum as well. I used spinach, but you could also try kale or rocket for something different.

Ingredients

  • 8 eggs
  • 3 cups baby spinach
  • ½ cup organic butter or coconut oil, melted 
  • ¼ cup sunflower/pumpkin seeds, plus 1 tbsp. extra
  • ¼ cup chia seeds
  • ¼ cup coconut flour
  • Salt & pepper

Method

Preheat oven to 180°C. Line a loaf tin with baking paper.
In a food processor or blender, mix eggs and butter/oil on high, until smooth (~2 minutes)
Add all other ingredients and mix again on medium until combined
Spoon mixture into prepared tin, top with extra seeds and bake for 40 minutes or until golden brown on top.
Allow to cool for 20 minutes before slicing

Serve on its own, topped with cottage cheese or even a thin spread of avocado with salmon and you have yourself a tasty snack
