Almond Flour Pancakes


I like to change things up on the weekends and enjoy something different for breakfast after Sunday Class. What better than pancakes! Quick, Easy, Tasty.


  • 4 eggs
  • 1 tsp vanilla extract
  • 1 cup almond flour
  • 1 tbsp coconut oil

Whisk eggs and vanilla extract together. Add almond flour and stir to combine. Heat coconut oil in a frying pan.

Once warm, pour ~ 2 tablespoons of batter into pan to form a pancake.

Once batter starts to bubble, flip and cook on other side. Repeat with remaining batter.

Serve with your favourite toppings and enjoy! (Btw, Pot set yoghurt and heated berries make a great topping!!)
